Frying Seafood
Frying seafood is a task if your not set up for doing the breading and frying regularly. SO you might as well do it right and invite the neighborhood. This recipe is for 20:
- 8 lbs of fish filets (catfish is a good choice)
- 5 lbs of bay scallops
- 5 lbs of medium shrimp
- 5 lbs of pre-fried clam strips
- 2 bags of hush puppy mix
- 3 lbs all purpose flour
- 2 bags of seafood breading mix
- 1/2 dozen eggs
- qt. of milk
- 3 qts. vegetable oil
Assemble the seafood and 3 large bowls. In the first bowl put the flour and season it with salt & pepper. In the second bowl the eggs and milk mixture beaten lightly. The third bowl gets the seafood breading. Try to keep your left hand the wet one and your right hand the dry one. Pick up the seafood with your left and put the seafood in the flour. Now with your right hand push flour over the seafood until it's covered. Now pick up the floured seafood shake it a little and place it in the egg/milk bowl. With your left hand dunk the seafood under the mix drain for a second
and deposit it in the breading. With your right hand cover the seafood with the breading and remove onto a tray and proceed. Only do a few piece at a time and refrigerate. Heat the oil to 350 degrees in the skillet you are using. Mix the hushpuppy mix as directed and spoon into the hot oil. Cook until golden brown and drain. Put into an oven at 150 degrees to keep warm until all the food is done. Next fry the fish about 3 minutes until white inside. Then the scallops and shrimp and finally clam strips which only take a minute or two. Eat as soon as possible fried food doesn't
hold well. P.S. Get some help with clean up!
