A quick guide to seafood meals whether for families on the go or entertaining friends. Seafood soups are a great way to use scraps or leftovers. Raw or cooked why throw away any seafood? You can start any great seafood soup or sauce by making your own stock. Start with any left over shells from shrimp, lobster, crab etc. Tail pieces of fish, heads, but not insides. Boil together with spices a vegetable ends for several hours on low heat. When the liquid is reduced to 1/3 it's original amount check for seasoning
and it's done. Strain off and discard the remains add fresh seafood and vegetables or leftovers, pasta, rice or anything you like for a hardy soup.
A great no fuss appetizer is bought smoked seafood. Salmon, tuna, bluefish, scallops, mussels plain or mixed with sour cream or cream cheese are quick and tasty. Shrimp make a great appetizer and if your grilling dinner have a grilled fiery shrimp. Just take your favorite BBQ sauce and add crushed hot peppers, hot sauce or jerk seasoning. Brush on the shrimp and grill a few minutes on each side. Mussels are another easy appetizer. Buy the cleaned mussels saute with butter wine and parsley. Cover 10 minutes and it's ready. Add pasta to the mix and dinners ready.
Any fish filet can be broiled or baked with a little butter, wine, season salt for a few minutes and it's done. Only one piece of fish? Add fresh vegetables and serve over pasta or rice for a one dish dinner. Almost any seafood can be sauteed with butter, wine, stocks and added to any rice or pasta for a quick inexpensive meal. Relax, seafood is easy to cook and very diverse. Add seafoods to your weekly meal plan and tell a friend that you solved the mystery of cooking seafood!
